A breakfast Uggani from the Rayalaseema cuisine mad of steamed puffed rice with the combination of fritters.The puffed rice part is called uggani , Ogirani,Borugula Tiragavata,Bourugulla chitrannam and the fritters are called bajji.

Uggani with puffed rice is an easy brunch & breakfast recipe made with puffed rice,spices, peanuts,onions and tomatoes. It is popular dish from the south Indian state of Karnataka and is also a street food.Uggani is mostly eaten with mirchi bajji or stuffed chilli bajji.

Uggani is a lighter delicious south Indian breakfast. Move over idli and vada, try this simple and easy brunch recipe.

Puffed rice is mainly used in Uggani. Puffed rice can be made ino a ready to eat cereal by heating rice under high pressure in the presence of steam to form puffed grains. While most of us enjoy some chats like bhel puri with puffed rice,we are not aware of the variety of nutrients this breakfast has to offer. The puffed rice snacks or breakfast promotes digestion,aids in weight loss and provides energy.

Ingrediants

  • Puffed Rice
  • Bowl of water
  • Roasted gram dal
  • Green chillies
  • Chopped coriander
  • Chopped Onion
  • Tomato
  • Turmeric powder
  • Salt
  • Chilli
  • Mustard.
  • Raw peanuts
  • Curry leaves

Preparation Method

  • First wash the puffed rice and squeeze out the excess water. Add oil,mustard seeds,Urad dal,curry leaves and groundnuts in a pan and mix.
  • Cook them until light brown. Add salt and to this, add spices like turmeric and chilli  as per your taste.
  • Throw in your chopped onion and tomatoes along with the spices. When the tomatoes and onion become soft,add pugged rice to the pan and give it a good mix.
  • Squeeze lemon and cook for five minute under medium flame and serve hot in a bowl.

Note

  • All vegetables and spices should be green and fresh which enhance fragrance.
  • Puffed rice should not be soaked for longer time.
