Nowadays all the people like to eat small grain type of food every now and then to maintain their health. We have seen our grandmothers and grandfathers living healthy even in their old age. This is because of the traditional diet of millets that they ate as children. They are rich in nutrients like protein,fiber,calcium,iron and vitamins.

Varagu Arisi(Kodo millet)

Varagu Arisi(Kodo millet) has more fiber then wheat in terms of providing more energy to the body. It is easily digestible. And grains are high in protein and minerals salts. It is rich in phosphorous,magnesium,manganese,iron, calcium and Vitamin B. Its an urinary dilator.Relieves constipation. Reduces body weight.Helps control blood sugar levels,lower high blood pressure,flush out unwanted toxins and improve blood circulation. Regulates the liver,strengthens the nervous system and bones.

Varagu cucumber dosa

Ingrediants

  • Varagu rice(Kodo Millet) – 100 grams
  • Cumin – 1 tsp
  • Coconut  4 tsp
  • Cucumber – 100 grams
  • Chilli – 1
  • Coriander – 1 tsp

Preparation Method

  • First pour enough water to submerge the millets and soak it for one hour. Then, cut the cucumber into pieces. Then put the soaked rice and cucumber in the mixer and grint it.
  • Similarly, grind chillies,cuin,coconut and coriander.Next,ad the ground chilli paste to the flour and mix it. Add requied amount of salt. Now the flour does not need to ferment.you can immediately mold it into dosa in dosa pan. Delicious nuticious dosa is ready.

Note

  • Cucumber should be tender and fresh, which enhance the taste of dosa.
  • Serve it with onion chutney or coconut chutney to add extra taste.
