Village Vintage Recipe, Ginger Curry Rule Outs Indigestion

Ginger curry is a south Indian dish, which rule out indigestion. These village styles ginger gravy is for those who are tired of not being able to eat properly, tired due to frequent stomach upset.

Ingredients

  • Tamarind – 2 lemon sized balls
  • Light ginger -50 grams
  • Dry chillies – 5
  • Fenugreek – 1 tablespoon
  • Grated coconut – 1 tsp
  • Big Onion -1
  • Green chillies – 2
  • Curry leaves
  • Pinch of Jaggery
  • Mustard – 1 tsp
  • Salt – as required
  • Oil – as required

Preparation Method

  • First, Wash and peel the ginger and chop finely, finely chop onions and green chillies.
  • Soak tamarind in hot water.Leave oil in a pan and fry the ginger pieces.
  • Fry the grated coconut without leaving any oil in the pan.
  • In the same pan,fry chillies and fenugreek seeds.Roasted chillies,fenugreek,grated coconut,these three grind in a mixer.
  • Saute onions and green chillies in a little oil.Dissolve tamarind with required water,add ground paste,jaggery to it and boil it.
  • When it comes to a boil,add fried ginger pieces,onions,green chillies and boil further.When it boils well,take it out and add mustard and curry leaves.

Note

  • This broth is suitable for indigestion and bile.
  • It can also be used on special days if done without onion.
  • Jaggery is optional, if jaggery is added it enhances taste.
